My take on Mexican Rice Serve this dish with a side of guacamole or sour cream! #cookingmadesimplewithsonia #cooking #cook #recipe #homecooked #mealideas #mealinspo #dinner #dinnerideas #foodstagram #food #foodies #mexicanrice #comfortfood Ingredients: 1 1/2 cups of brown rice (or white) 3 cups of water 1 tsp of butter (optional) 2 tbsp olive oil taco seasoning salt, black pepper, garlic powder crushed chilli peppers (optional for spice) 2 bell peppers (red, yellow or orange) diced 1 red onion chopped 1 can of kidney beans 1 can of crushed tomatoes OR bottle of Tomato Sauce half a block of cheddar cheese grated jalapeno (fresh or pickled) mushrooms diced Instructions: 1. In a sauce pan add water and let it come to a boil 2. Add rice, butter, kidney beans, half a pack of taco seasoning, salt, pepper, and garlic powder, mix and let rice cook 3. In a fry pan add olive oil, onions and diced mushrooms, let saute for a few minutes 4. Then add diced bell peppers, with the remaining taco seasoning and crushed chilli peppers and saute till cooked 5. In a bowl, combine cooked rice, along with your cooked veggies 6. Add crushed tomatoes OR half a bottle of tomato sauce (Key is to make sure the rice mixture is moist so it doesn't get dry once it is baking 7. Preheat the oven to 400 degrees 8. Grease a baking dish (I use Pam), add half the rice mixture, cover with cheddar cheese and spread out jalapenos, then add the rest of the rice mixture, cheddar cheese and jalapenos and bake for 10-15 minutes or until cheese is melted evenly and golden

My take on Baingan Bharta with Mediterranean spices topped with spiced yogurt and ofcourse, naan. My home made naan turned out doughy just like bread and on the healthier side as I used whole wheat. 🌿Baingan Bharta recipe: Bake eggplants on 400 degrees for 1hr. Remove skin and place in bowl to smash. 🌿 In a mixer grind: 1 whole onion, 3 tomatoes, 3-4 green chilies, 2 whole bulbs of garlic, and an inch of ginger. 🌿In a pot, heat oil. Once hot, add cumin seeds and Asafoetida - allow to splutter. 🌿Add the tomato/onion paste. 🍅🌰 - saute for 10-15 mins. Add oil if required. 🌿Once oil starts to separate from the pan - add: 1 table spoon red chili powder, 1 table spoon coriander powder, 1 table spoon cumin powder, and 1 table spoon curry powder. Saute for 10 mins. 🌿Add the eggplant to the pot, along with 4-5 spoons of dry powdered mint leaves, 2 spoons of dried Fenugreek leaves, 1 spoon of Oregano, and any other green herb of your choice (parsley, cilantro, basil etc.) Saute for 15 mins. 🌿 Add yogurt and salt - saute for 15 mins. And you're done! Top with spiced yogurt with paprika.
